Pancakes


I made these pancakes yesterday morning and they turned out perfectly. They actually turned out prettier than they typically do when I use the pre-made Bisquick stuff. Boom! They were fluffy, golden, and delicious. I found the recipe on PW's website and they were very easy to make.
Makes 9 pancakes.
Cook time: 10 minutes
Here's what you'll need:
  • 1 1/2 c cake flour plus 1 T 
  • 1/4 tsp salt
  • 1 T plus 1  1/2 t baking powder
  • 1 T sugar
  • 1 c milk
  • 1 large egg
  • 1 1/2 tsp vanilla
  • 2 T butter
  • extra butter (optional)
  • maple or pancake syrup
  • large mixing bowl
  • 1 large skillet

Mix cake flour, salt, baking powder, and sugar in a medium or large bowl until combined.


In a measuring cup or small bowl, whisk together the milk, egg, and vanilla until combined.























Pour the milk mixture into the bowl of dry ingredients. Stir until just combined- do not overmix. The batter should still be slightly lumpy.



Melt butter in a microwave safe dish until completely melted. Pour into the bowl of pancake batter and mix until just combined.


Heat a skillet over medium-low heat. Use a 1/4 cup measuring cup to measure out each pancake serving.


Pour a 1/4 cup of batter onto the hot skillet. Cook until bubbles form across the cooking pancake batter and begin to pop.


Carefully flip to the other side and cook until golden brown.

Remove cooked pancakes from the skillet and set aside. Repeat with remaining batter.


Serve warm with butter and maple syrup.

Directions:
  1. In a medium size bowl, mix together cake flour, salt, baking powder, and sugar. In a separate bowl whisk together milk, egg, and vanilla. Slowly pour the milk mixture into the bowl of the dry ingredients. Stir gently until just combined- do not overmix.
  2. Place butter into a small dish and microwave until completely melted. Pour into the bowl of pancake batter and stir until just combined.
  3. Heat a skillet over medium low heat. Use a 1/4 cup measuring cup to pour each serving of pancake batter on to the hot skillet. Cook over medium low heat until bubbles form all over the batter and begin to pop. Carefully flip to the other side and cook until golden brown. Serve warm with butter and maple syrup.
