This is my fave banana nut bread recipe. My fiance found the recipe at ChezWhat? a couple of years ago and I haven't used another recipe since then. It's a super easy recipe to throw together and is very good. There are only two steps in the mixing process!

Here's what you'll need:
- 1/2 c (1 stick) butter, softened
- 1 c white granulated sugar
- 2 eggs
- 2 c flour
- 1/2 c chopped pecans
- 1 tsp baking soda
- 3 ripe bananas, mashed
- standard size loaf pan

Preheat the oven to 325 degrees. Coat a standard size loaf pan with non-stick cooking spray and flour (I used Baker's Joy which is non-stick cooking spray + flour in a can. Pam also makes this).
Cream together the softened butter and sugar until light and fluffy.
Add the eggs, flour, chopped pecans, baking soda, and mashed bananas to the bowl. Stir until combined.
Pour the batter into the prepared loaf pan.
Spread evenly and pop it into the preheated oven. Bake for 1 hr 15 minutes or until a toothpick inserted comes out clean.
That's it! So easy.

Suggestions:
- Serve warm fresh out of the oven or pop a slice in the microwave for 20 seconds for extreme perfection.
