Chewy Ginger Molasses Cookies

These little cookies are straight up delish. I made them due to a week long gingersnap craving. I've had this recipe bookmarked for a of couple years- it came from  Gimme Some Oven.  These cookies do taste like gingersnaps, but they are soft and chewy. I kept half the batch at home and took the rest to work. They were devoured within 24 hours. Many people have asked me for the recipe, so here it is!

Makes ~33 cookies.
Bake time: 8-10 minutes

Key Lime Pie Fudge

Hello! It's been a while. I've been super swamped with work and school, but decided this recipe wouldn't take long to post. This recipe is from Julia at Dozen Flours. I love every recipe of hers that I have tried. Good stuff.

And I love this fudge! It really does taste like Key Lime Pie. I would definitely make this again. I made this fudge to bring out to my grandparents house for our 4th of July get together. And you should make them too! If not for the 4th of July, then make them sometime this summer! It was a very easy recipe to make. The graham cracker crust is completely optional, but recommended. Who doesn't love homemade graham cracker crust?

Banana Nut Bread

This is my fave banana nut bread recipe. My fiance found the recipe at ChezWhat? a couple of years ago and I haven't used another recipe since then. It's a super easy recipe to throw together and is very good. There are only two steps in the mixing process!

Makes 1 loaf.
Bake time: 1 hr 15 min

Here's what you'll need:

  • 1/2 c (1 stick) butter, softened
  • 1 c white granulated sugar
  • 2 eggs
  • 2 c flour
  • 1/2 c chopped pecans
  • 1 tsp baking soda
  • 3 ripe bananas, mashed
  • standard size loaf pan

Carrot Cake Cream Pies

These are originally called Carrot Cake Whoopie Pies, but I'm calling them Carrot Cake Cream Pies because they remind me of Oatmeal Cream Pies (yum). Also because no one in my family understood what a whoopie pie was when I brought them over Easter day. I found this recipe last year at Grin and Bake It. They turned out so well! Super moist and delicious. There was also a recipe for a Carrot Cake Martini on the Grin and Bake It website, but I didn't have time to grab all the ingredients AKA alcohol. I bet they would have been delicious!

Makes 12 or 24 cream pies (depending on if you slice each one in half like I did)
Bake time: 14-16 minutes

Cadbury Egg Stuffed Cookies

Do these look delicious or what? I think this is the cutest thing I've ever baked. Let me explain what's going on in this picture: a miniature cadbury egg has been stuffed inside a homemade cookie, topped with homemade frosting which has been dyed green for the occasion, and topped with peanut butter speckled M&M eggs. Yes, yes, and yes.

I found the cookie recipe on this Making Memories blog and the frosting recipe is from Tasty Kitchen. You should make them for Easter this weekend. Your guests will thank you. Here's another Easter dessert recipe that you might be interested in, too!

Jelly Bean Cookies

Yayyyy, Easter cookies! They'll suit all your jelly bean/cookie loving needs. What a perfect combination. I stumbled up this recipe last week on Alli 'n Son's blog. She hosts Sweet Tooth Friday every week which I would like to participate in soon. But not with this recipe..because it's hers. These turned out very well! They have rolled oats in them, so they turned out to be a fluffly, oatmeal cookie with a slightly fruity flavor.

I'm super pumped about making Easter treats this year. This is the first of three to come, so keep checking back!

Chocolate Cookies with Peanut Butter Filling

Mmmm, I really love these. I actually love all things that include peanut butter. I found this recipe on a blog called Liv Life. There are lots of other recipes on her blog that I'm interested in making. Anyway, this is a very good cookie recipe and they were super easy to make. I'll definitely make these babies again for some gathering in the near future.

Mint Chocolate Chip Cookies

I made these crazy green cookies for St. Patrick’s Day this year. They were very easy to make. I found the idea while searching Tastespotting on The Family Kitchen blog. These cookies are just a combination of my go-to sugar cookie recipe, green food coloring, and Andes Creme de Menthe baking chips. I love those baking chips! I eat them by the handful. I think these make a good spring time cookie because of their color and the mint flavor. Make em! You probably already have all the ingredients in your pantry besides the mint baking chips.

Makes 40 cookies.
Bake time: 12-14 minutes

Strawberry Cake Bites

I made these on Valentine’s Day, but they would be good to make on any occasion. I used my favorite strawberry cake recipe and made them in a mini-muffin pan so they would be cute and poppable. I think these would be good for a party or gathering because of their size. You can also use a 13x9 inch baking dish or two round pans instead when you make the cake. Anyway, this cake is very very good and very strawberry-y. Very.

Makes 55 mini cupcakes.
Bake time: 18-25 minutes
Ingredients:
  • 1 box of white cake mix
  • 1 c frozen strawberries, divided (you will need 1/2 c frozen and 1/2 c thawed)
  • 4 eggs
  • 1 small box (3 oz) of strawberry jello
  • 1/2 c boiling water
  • 1 box (3 3/4 c) of powdered sugar
  • 1 stick (1/2 c) of butter, softened
  • 8 oz cream cheese, softened

Brownies with Dulce de Leche and Toasted Pecans

These brownies are freaking awesome. Best brownies I've ever made or eaten. They are loaded with globs of caramel and are rich and chocolatey. I seriously love them. Everyone who has tried them says they love em too. I don't think I'll ever look for another brownie recipe. I found this recipe on David Lebovitz's site. I found his website while looking for a good German Chocolate cake recipe once. He's received tons of good reviews, so I trust his recipes to be awesome.

Don't know what kind of dessert to make for gathering? Make these. Searching for the perfect brownie recipe? Here it is.

Makes 12 brownies.
Bake time: 35-45 minutes

King Cake with Praline Cream Cheese Filling

Check this little gem out. You should totally make it for Mardi Gras (March 8th). Don't buy those crummy store bought King Cakes this year. THIS is what you are looking for. It's super fresh and delicious and you're gonna love it. My mom and I found this recipe a few years ago on this Gourmet Girl blog and added in this praline filling recipe because that's how we like em.

I admit, it is sort of time consuming, but completely worth it. The actual 'work' time isn't very long. It's just that there are several steps to this recipe and that's what makes it take so long. Lots of waiting time.

I've made 3 of these bad boys within the past two days. Anybody want a king cake?! I think I'll try to sell em next year. I have one customer at the moment and I'm working extra hard to make her cake look as spiffy and tasty as possible :)  Anyway, the point is, don't be a baby and just make this king cake. You won't regret it.

Sugar Cookies with Peppermint Buttercream Frosting

Aren’t these little guys adorbs? I love em. They were tasty and fun to make. I love rolling out cookies and decorating them. I found the recipe on one of my favorite baking blogs, Dozen Flours. All the the baked items I have tried from there have turned out so well. You should check out some of her recipes!
These little babies would be perfect for Valentine’s day, if you go for the heart shape. Too bad I'm posting them the day after Valentine's day. You can use any type of cookie cutter shape you'd like though. This is the best sugar cookie recipe I've tried, so I'll definitely be using it any time I need to make some sugar cookies. I ended up making two batches of these because I loved em so much. They all turned out cute and yummy :)
Makes 16-20 cookies.
Cook time: 8-12 minutes

Dulce de Leche

Mmmm... This stuff is good. Dulce de Leche is a thick, milk-based caramel sauce. It's really easy to make at home. All you need is a can of sweetened condensed milk. Pre-made dulce de leche can be found on the hispanic isle at most grocery stores. It is labeled as Cajeta.

I have used the pre-made kind before, but I think it's more fun to make your own. You can add it to all sorts of baked items. I'm going to use mine in some brownies.

Cook time: 3-4 hours

Ingredients:
  • 1 14 oz can of sweetened condensed milk

Doggy Birthday Cake

We celebrated my sweet pup's birthday today at work. To celebrate, I gave Callisto a pat on the head and a peanut butter banana cake. She loved it. So did her friends. I've never seen a cake disappear so quickly. I think it was gone within 5 minutes.

Anyway, this is a super easy recipe to whip up that I found over at Taste. And it is perfectly okay for your dog to eat. It smelled really good when I pulled it out of the oven, but I doubt it would taste good to us because there is no sugar in it. Please make it! Your dogs will love you.

Makes 16 servings.

Mexican Wedding Cookies

Mexican Wedding Cookies...AKA Danish Wedding Cookies, Russian Tea Cakes, Italian Wedding Cookies, Butterballs, or Snowballs. These little guys are soft pecan shortbread cookies that are rolled in powdered sugar. And they are delicious. And addicting. I found this recipe through Tastespotting on a blog called Eat Yet. If you love pecan shortbread cookies, then you’re gonna love these guys. I don’t even love pecan shortbread cookies and I love these guys. They are equally as good without being rolled in the powdered sugar too. I’ll definitely be making them again.
I made them for my friend Katie, who designed my whole blog. Did you know that web design is super hard? I did not know this until I created this blog. My version looked like crap. It would have hurt your eyes. Anyway, I’m super thankful that Katie helped me set all of this up so I could start putting my recipes on here! Her only request was Mexican Wedding Cookies, so here they are. I hope you love them Katie! :)
Makes ~ 28 cookies
