These little cookies are straight up delish. I made them due to a week long gingersnap craving. I've had this recipe bookmarked for a of couple years- it came from Gimme Some Oven. These cookies do taste like gingersnaps, but they are soft and chewy. I kept half the batch at home and took the rest to work. They were devoured within 24 hours. Many people have asked me for the recipe, so here it is!
Makes ~33 cookies.
Bake time: 8-10 minutes
Here's what you'll need:
- 3/4 c butter, softened
- 1 c white granulated sugar
- 1/4 c molasses
- 1 egg
- 2 c all purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp ginger
- 1/2 tsp salt
- large mixing bowl
- small bowl for rolling dough in sugar

Start by preheating the oven to 375 degrees.
Add the softened butter and sugar to a large mixing bowl. Beat together until light and fluffy.
Add the egg and molasses to the mixing bowl. Mix until combined.
Slowly mix in the flour, baking soda, cinnamon, cloves, ginger, and salt until combined.
Fill a small bowl with white granulated sugar and set aside. Use a cookie scoop, tablespoon, or your hands to scoop out a small amount of dough from the mixing bowl. Next roll the dough into a 1 inch diameter ball.
Place the ball of dough into the bowl of sugar and roll until completely covered in sugar. Place on a cookie sheet and repeat with the remaining bowl of cookie dough,
Bake for 8-10 minutes. Cookies will crack over the top during baking.
Remove the cookies from the oven and allow them to cool on the pan for 1-2 minutes. Once this time is up, transfer the cookies to a cooling rack.
Grab one while you still can! These cookies will be gone before you know it.

- Pour a small amount of white granulated sugar into a small bowl. Roll the cookie dough into 1 inch diameter balls. Place the each ball of dough into the bowl of sugar and roll until completely covered in sugar. Place on a cookie sheet and bake 8-10 minutes. Remove from oven and allow to cool 1-2 minutes before transferring to cooling rack.
