Blueberry Crumb Cake



Hey, y’all. It’s Spring time and also time for you to make this cake. It is superb. PW recipe. Easy to make. And the blueberries are abundant right now. Plus it's a beautiful day. Do it! 

Makes 16 servings.
Bake time: 40-45 minutes

Ingredients:
Cake
  • 1/2 stick butter + 1 T
  • 3/4 c sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 2 c all purpose flour
  • 3/4 c whole milk
  • 2 1/4 tsp baking powder
  • 1/2 tsp salt 
  • 2 c fresh blueberries
Topping
  • 3/4 stick butter
  • 1/2 c sugar
  • 1/2 tsp cinnamon
  • 1/2 c flour
  • 1/4 tsp salt

Preheat the oven to 350 degrees. Spray a 13 x 9 inch baking dish with non-stick cooking spray. I split the batter between two 8 x 8 inch dishes instead and kept one at home and took the other to a friends house.























Start by creaming the butter and sugar together.
























Add the egg and vanilla to the creamed butter and sugar. Mix until totally incorporated.
























Add in the flour and milk alternately, mixing until smooth. Mix in the baking powder and salt.

Gently fold in the blueberries and spread evenly into the prepared baking dish. 






In a separate bowl cut together the topping ingredients using a pastry cutter until the mixture resembles crumbs.

 

If you don't have a pastry cutter, you could use two forks or two knives to cut the ingredients together.


Sprinkle the crumb topping over the batter. Bake for 40-45 minutes or until golden brown.


Remove from the oven and sprinkle with sugar. 


Cut into squares and serve warm. I served mine over ice cream. You could also serve it with softened butter or whipped cream.

  2. Cream the butter and sugar. Add the egg and vanilla, mixing until combined. Add the flour and milk alternately until totally incorporated. Mix in the baking powder and salt until combined. Gently stir in blueberries until evenly distributed. 
  3. Pour the batter into the prepared baking dish. In another bowl, cut the ingredients for the topping together using a pastry cutter or two forks. Sprinkle the crumb mixture over the cake batter.
  4. Bake 40-45 minutes or until golden brown. Remove from oven and sprinkle with sugar. Cut into squares and serve warm with ice cream, softened butter, or whipped cream.
