Key Lime Pie Fudge

Hello! It's been a while. I've been super swamped with work and school, but decided this recipe wouldn't take long to post. This recipe is from Julia at Dozen Flours. I love every recipe of hers that I have tried. Good stuff.

And I love this fudge! It really does taste like Key Lime Pie. I would definitely make this again. I made this fudge to bring out to my grandparents house for our 4th of July get together. And you should make them too! If not for the 4th of July, then make them sometime this summer! It was a very easy recipe to make. The graham cracker crust is completely optional, but recommended. Who doesn't love homemade graham cracker crust?

Makes 64  1 in squares of fudge

Carrot Cake Cream Pies

These are originally called Carrot Cake Whoopie Pies, but I'm calling them Carrot Cake Cream Pies because they remind me of Oatmeal Cream Pies (yum). Also because no one in my family understood what a whoopie pie was when I brought them over Easter day. I found this recipe last year at Grin and Bake It. They turned out so well! Super moist and delicious. There was also a recipe for a Carrot Cake Martini on the Grin and Bake It website, but I didn't have time to grab all the ingredients AKA alcohol. I bet they would have been delicious!

Makes 12 or 24 cream pies (depending on if you slice each one in half like I did)
Bake time: 14-16 minutes

Jelly Bean Cookies

Yayyyy, Easter cookies! They'll suit all your jelly bean/cookie loving needs. What a perfect combination. I stumbled up this recipe last week on Alli 'n Son's blog. She hosts Sweet Tooth Friday every week which I would like to participate in soon. But not with this recipe..because it's hers. These turned out very well! They have rolled oats in them, so they turned out to be a fluffly, oatmeal cookie with a slightly fruity flavor.

I'm super pumped about making Easter treats this year. This is the first of three to come, so keep checking back!

Makes 36 cookies.
Bake time: 1o-12 minutes

Healthy Shrimp Stir-Fry

Sometimes I get on healthy kicks and now is one of those times. I've been searching the internet the past few days for healthy, low calorie meals. Here's one! I found it on PW's website, believe it or not. This is a very veggie filled meal. It's light, fresh, and delicious. It's a perfect, colorful meal to fix during the Spring or Summer. And it alllll takes less than 30 minutes to throw together.

Mint Chocolate Chip Cookies

I made these crazy green cookies for St. Patrick’s Day this year. They were very easy to make. I found the idea while searching Tastespotting on The Family Kitchen blog. These cookies are just a combination of my go-to sugar cookie recipe, green food coloring, and Andes Creme de Menthe baking chips. I love those baking chips! I eat them by the handful. I think these make a good spring time cookie because of their color and the mint flavor. Make em! You probably already have all the ingredients in your pantry besides the mint baking chips.

Makes 40 cookies.
Bake time: 12-14 minutes
